Potato chips are deliciously addictive – salty, crunchy, and satisfying. But these deep fried treats can be loaded with fat, and the gourmet ones can be expensive. Why not try making your own? We have a clever and efficient way of making potato chips without a drop of oil – use your microwave.
Microwaved potato chips are surprisingly easy and shockingly tasty. They somehow become perfectly crispy without any oil! As long as you have a sharp knife and a microwave (as well as potatoes, obviously), you’ll be able to make perfect chips every time. It’s amazing how useful a microwave can be — you can prepare whole meals in one!

Use a mandoline, or if you don’t have one of those, an extra sharp knife, to carefully slice the potatoes to 1/8 inch thick or thinner. Put the slices immediately in cold water to remove excess starch. After you’ve finished slicing the potatoes, rinse them under cold water until water runs clear. Using dish towels (or gently use a salad spinner, if you have one), dry off the potato slices.
Using a microwave-safe plate, arrange the slices so that the edges don’t touch. Sprinkle with salt and any other spices you might like, such as paprika or garlic powder. At high power, microwave the slices for three minutes, then flip and microwave at half power. If any slices are browned at this point, remove them. Continue cooking these chips at one minute intervals until crispy and golden brown. You can season with more salt, grind fresh pepper on top, or sprinkle with parmesan cheese and garlic powder.
