Delicious produce is now in season and summer is the best time to start eating healthy. Today we’re going to share how you can keep the medical bills down by fueling your body nutritiously while creating budget friendly meals to help you get out of debt.
Save Money By Checking For In-Season Produce
Fire Up The Grill
If you have a grill, I’m sure we don’t have to remind you to use it. Along with throwing on some lean steak tips or chicken, asparagus is abundant this time of year and should only cost you anywhere from $1-$4 a pound.
- Simply season the asparagus with olive oil, salt, pepper and a bit of Parmesan and the thick spears will crisp on the outside while absorbing the flavor on the inside. Getting rid of debt will be a lot easier with a belly full of anti-aging elements that help keep your brain sharp.
- Eat a peach. June is one of the best months for peaches. If you’re looking for a healthy desert under 100 calories and under $2 a pound, peaches on the grill with yogurt and honey is a perfect ending to a backyard BBQ. If you’re really trying to kick summer into full gear, top it off with some low fat ice cream.
Keep It Fresh
What tastes more like summer than a fresh, juicy strawberry?
- Look out for the “pick your own strawberries” signs, this means they’re in top form. If you’re not in arms reach for picking, grocery stories like Walmart are selling strawberries for as low $1.98 per pound. Paired with a spinach salad or even combined with a salsa, strawberries are super versatile when it comes to making a meal.
- Get over here garlic. Green garlic and spring garlic are in season in June. Did you know that it’s edible from bulb to the tender part of the stalk? Garlic chives, cloves, leeks or minced, it’s easy to incorporate into any meal.
My personal favorite? Roasted zucchini with garlic. Once you cut each in half, then again quartered lengthwise, throw it into a bowl with some fresh minced garlic cloves, olive oil and some salt and pepper. Spread the pieces over some tin foil on the grill or onto a roasting pan skin side down in the oven preheated to 450 degrees for 8-15 minutes. Super easy, healthy and yummy!
