Isn’t it great to walk into your home and get smacked in the face with the pleasant aromas of rich, slow-cooked comfort food? Plus, the only work left is to put in on a plate and enjoy. That’s the beauty of crockpots; you just toss in the ingredients and let the machine do it’s job for a few hours. Enjoy these inexpensive crockpot meals all throughout fall.
Inexpensive Crockpot Meals & Recipes
Ingredients: 3 pound boneless chuck roast, potatoes, carrots, 1 can of tomato soup, 1 can of cream of mushroom soup
Instructions: Chop potatoes into 1-inch cubes. Peel carrots and cut in half lengthwise, then cut into 1-inch pieces. Add both to the crock pot. Heat 1 tablespoon of oil in a skillet and sear the roast on all sides. Then place the roast into the crock pot on top of the vegetables. Pour the tomato soup and cream of mushroom soup over the top of all ingredients. Set the slow cooker to 8 hours.
Cost per serving should be around $2.00.
Shredded Chicken Tacos
Ingredients: 2 pounds of chicken breast, 1 packet of taco seasoning, 1 cup of chicken broth, taco shells/tortillas (additional toppings can be added, like salsa, shredded cheese, black beans, lettuce, tomato, onion, avocado, etc.)
Instructions: Place chicken breasts in the slow cooker. Mix the taco seasoning into 1 cup of chicken broth. Pour the mixture over the chicken. Set the slow cooker to 6 hours. Remove the chicken when finished and shred it with forks. Prepare your tacos as you wish.
Cost per serving can vary depending on extra toppings, but it can be as low as $1.75.
Spinach and Ricotta Lasagna
Ingredients: 6 regular lasagna noodles, 2 ten ounce packages
of chopped frozen spinach (thawed and
strained), 1 cup ricotta, 3/4 cup of grated Parmesan, 3 cups marinara sauce 1.5 cups shredded mozzarella
Instructions: Mix the spinach, ricotta, and half a cup of the Parmesan in a bowl. In another bowl, mix the marinara and half a cup of water. Spread 3/4 of a cup of the marinara mixture on the bottom of your slow cooker. Cover with a layer of noodles (cut to fit). On top of the noodles, spread 3/4 of a cup of the remaining marinara mixture, half of the spinach mixture, and half a cup of mozzarella. Repeat with another layer. Top it off with the remaining noodles, marinara mixture, mozzarella, and parmesan. Set the slow cooker for 4 hours.
Cost per serving should be about $3.00.
